Rocky Road Recipes ~ Ice Cream, Cake & Ice Cream Pie
If you're like me, you feel that the delectable goodness of the three luscious flavors that make up Rocky Road is absolute ingenious! The comfort in the rich chocolate, the sweetness of marshmallow, and the crunch of the nuts is enough to make your mouth water just thinking about it! Now, you have the recipes to enjoy your favorite in three different ways!
If you've had an unpleasant day, or just need to relax with a good 'ol comfort food, why not whip up one of these easy recipes and indulge yourself in a little pleasure.

Homemade Rocky Road Ice Cream
3 Tbs. of corn starch
6 cups of whole milk
2 2/3 cups of sugar
4 large eggs
3/4 tsp. of salt
13 oz. can of evaporated milk
1 pt. of whipping cream
2 squares of chocolate (melted)
1 jar of marshmallow cream (or 1/2 bag of mini marshmallows)
1/2 to 2/3 cup of sliced almonds
25 lbs. of crushed ice
ice cream salt
Mix cornstarch with 1/2 cup of milk. Add 1/2 cup more milk and cook in a double broiler until thick and smooth. (Beat constantly to avoid lumps). Blend sugar, eggs, salt and evaporated milk with mixer. Add hot mix to this and beat well. Add whipping cream, remaining milk, melted chocolate, marshmallow, and nuts. Pour into a gallon hand or electric ice cream freezer and pack with ice, alternating with layers of salt until full. Turn until firm and remove paddle. Pour off excess water. Add more ice and salt, cover freezer lightly and store until ready to serve. Makes 1 gallon.
Rocky Road Fudge Cake
BASE:
1/2 Cup of margarine of butter
1 oz. (1 square) of unsweetened chocolate (chopped)
1 cup of all-purpose flour
1 cup of sugar
1 tsp. of baking powder
1 tsp. of vanilla
2 eggs
3/4 cup of chopped nuts
FILLING:
8 oz. package of softened cream cheese (reserving 2 0z. for frosting)
1/4 cup of butter or margarine (softened)
1/2 cup of sugar
2 tbs. of flour
1/2 tsp. of vanilla
1 egg
1/4 cup of chopped nuts
6 oz. package (1cup) of semi-sweet chocolate chips
FROSTING:
2 cups of mini marshmallows
1/4 cup of butter or margarine
1/4 cup of milk
1 oz. (1 square) of unsweetened chocolate (chopped)
reserved 2 oz. of cream cheese
3 cups of powdered sugar
1 tsp. of vanilla
Heat oven to 350°. Grease and flour a 13x9 inch pan. In a large saucepan, over low heat, melt 1/2 cup of margarine and 1 oz. unsweetened chocolate, stirring constantly until smooth. Lightly spoon flour into measuring cup; level off. Add the 1 cup of flour and remaining base ingredients; mix well. Spread into the prepared pan. In a small bowl, combine all filling ingredients except 1/2 cup of nuts and chocolate chips. Beat 1 minute at medium speed until smooth and fluffy; stir in nuts. Spread over chocolate mixture; sprinkle evenly with chocolate chips. Bake at 350° for 25 to 35 minutes or until a toothpick comes out clean. Immediately sprinkle marshmallows on top. Return to oven and bake an additional 2 minutes. In a large saucepan, over low heat, combine 1/4 cup of margarine, milk, 1 oz of unsweetened chocolate and reserved 2 oz. of cream cheese ; stir until well blended. Remove from heat; stir in powdered sugar and 1 tsp. of vanilla until smooth. Immediately pour frosting overmarshmallows and lightly swirl with knife to marble. Refrigerate until firm. Cut into sqaures.
Rocky Road Ice Cream Pie
1 pre-made cookie crust (or crush Oreo cookies and mix with margarine)
chocolate ice cream
1 to 1 1/2 jars of marshmallow cream
almonds ( to taste )
whipped cream
chocolate syrup
1/4 cup of mini marshmallows
Starting with cookie crust, press a 1" inch layer of chocolate ice cream into pan. Heat marshmallow cream just enough to make it pourable. Pour cream and spread evenly onto ice cream layer. Repeat layers until the top finishing with the marshmallow cream. Now, add a thin layer of nuts. Add whipped cream and garnish with 1/4 cup of marshmallows and a few more almonds. Drizzle with chocolate syrup. Freeze until hard. Slice and serve like pie.
