Giblet Gravy for the Turkey
Cook gizzard, heart and neck with a stalk of celery, 1 onion, and 2 sprigs of parsley until giblets are tender. (About 1 1/2 hours). Cool giblets and chop fine. Pour off and save all but 4 tbs. of drippings remaining in roasting pan. With the remaining 4 tbs., blend in 3 tbs. of flour then gradually add 2 cups of strained giblet stock, stirring constantly until the boiling point is reached. Season to taste, and add giblets.
1 can of drained green beans, 1/8 tsp. of garlic salt, 1/2 tsp. of salt, 1/4 oz can of sliced mushrooms, 1/4 cup of salted almonds that have been slivered, 4 oz of grated American cheese, 2 tbs. of Parmesan cheese, 1/2 tsp. paprika
SAUCE: 2 tbs. of butter, 1/2 tsp. of chili powder, 2 tbs. of flour, 1 cup of milk
Make sauce of melted butter, flour, chili powder, and then add milk. Heat until sauce begins to thicken. Grease casserole dish. Place in casserole dish a layer of drained green beans, garlic salt salt, mushrooms, almonds, grated cheese and half of the sauce. Repeat, then cover with toasted bread crumbs or french fried onions,then add the Parmesan cheese and paprika. Bake at 375° for 30 minutes.

Sausage Dressings
2 loaves of French bread, chicken broth, 3 tbs. butter, 2 tbs. of parsley, 1/4 tsp. of thyme, 3 Jonathan apples, 3 eggs, 2 tbs. of oil, chopped onions and celery, 1/4 tsp. marjoram, 1/4 cup of white raisins, 1 lb of pork sausage.
Dip bread slices into chicken broth and squeeze. Saute onions and celery in butter and oil. Brown sausage and then add parsley, marjoram and thyme. Combine all ingredients and add white raisins and diced apples. Bake at 350° for 1 1/2 hours.
Cranberry Salad
1 pkg. of raw cranberries, 3 apples with peel, 3 cups of hot water and juice, 1/2 cups of chopped nuts, 2 oranges, 1 1/2 cups of sugar, 2 pkg. of lemon or raspberry Jello.
Grind raw cranberries and apples. Dice oranges. Mix wit sugar and let stand for 1 hour. Dissolve Jello in hot water and add to the other mixture. Put in refrigerator to set. Serve on a bed of lettuce with mayonnaise.
Praline Pumpkin Pie
1 uncooked pie crust, 3 tbs. of butter or margarine, 1/3 cup of firmaly packed brown sugar, 1/3 cup of chopped pecans, 1 cup of evaporated milk, 1/2 cup of water, 3 eggs, 1 1/2 cups of canned pumpkin, 1/2 cup of granulated sugar, 1/2 cup of firmly packed brown sugar, 1 1/2 tsp. pumpkin pie spice, 1 tsp. of salt.
PRALINE LAYER: Put pie crust into a 9" pie plate and flute the edges, Cream the butter with 1/3 cup of brown sugar in a small bowl and stir in pecans. Press over the bottom of the prepared pie shell in an even layer. Bake in very hot oven (400°) for 10 minutes. remove and cool on wire rack for 10 minutes. Lower the oven heat to 350°.
FILLING LAYER: Combine milk and water in a 2-cup measure. Beat eggs slightly in a large bowl, stir in pumpkin, granulated sugar, the 1/2 cup of brown sugar, pumpkin pie spice and salt; beat in milk mixture. Pour into cooled pastry shell. Bake in a 350° for 50 minutes, or until the center is set but still soft. (Do not overbake, pie will continue to set as it cools). Cool completely on wire rack. Top with whipped cream if desired.
